? The Jersey cabbage, also called Jersey kale or cow cabbage, is an extraordinary heirloom variety native to the Channel Islands. This plant is renowned for its remarkable height and long stalks, making it both a historical and horticultural curiosity. The plant typically develops a long, straight stalk that commonly reaches between 6 to 10 feet (1.8 to 3.0 m), while under ideal conditions it can grow as tall as 18 to 20 feet (5.5 to 6.1 m). The stalks were historically prized for their use in making walking sticks, with 30,000 units exported annually by the early 20th century, and also served practical purposes as fencing and rafters.
The lower leaves of Jersey cabbage were traditionally used as livestock fodder. In historical records, it was noted that five plants could sustain 100 sheep or 10 cows, and sheep fed on the leaves reportedly produced exceptionally long, silky wool up to 25 inches (64 cm) in length. The upper cabbage heads are comparatively small, leading early observers to believe that the plant’s purpose was more for stalk production than for edible heads. The plant’s robust growth is encouraged by stripping leaves to produce a bare, straight stalk, sometimes varnishing it for walking sticks or bending the root to create a handle.
Jersey cabbage is now rarely cultivated, primarily maintained by heritage gardeners or those producing walking sticks, but it remains a fascinating heirloom with historical significance. This variety is hardy, slow-growing, and requires approximately 180 days to reach maturity.
