β¨ Chia (Salvia hispanica) is a species of flowering plant in the mint family (Lamiaceae), native to central and southern Mexico and Guatemala. Plant Description: Annual herb, grows up to 1.75 m tall, opposite leaves 4β8 cm long, 3β5 cm wide. Flowers are purple or white, produced in spikes at the end of each stem. Hardy in USDA Zones 9β12.
Seeds: Small ovals, ~1 mm diameter, mottled colors (brown, gray, black, white). Seeds are hydrophilic, absorbing up to 12Γ their weight in water, forming a gel-like coating. Seeds contain 25β30% extractable oil, rich in Ξ±-linolenic acid (Ο-3), 18% Ο-6, 6% Ο-9, 10% saturated fat.
Nutritional Value:
